Ingredients

    1T olive oil
    4 fish fillets, boneless (Salmon, Flounder, Tilapia, etc)
    salt and pepper to taste
    1/2 tsp basil
    1/2 tsp garlic powder
    Pinch of chopped green onion, red pepper, or dill weed for garnish

    HORSERADISH CREAM
    1/2 c low-fat sour cream
    1T horseradish sauce - or to taste


Directions

To make fillets: In a skillet, heat the olive oil. Season the fish with salt and peper to taste, basil and garlic powder on both sides. Cook the fish in the skillet for 3-5 minutes on each side until nicely browned and fish flakes easily when tested with a fork. DO NOT OVERCOOK.
To make horseradish cream: Meanwhile, in a small mixing bowl, combine sour cream and horseradish sauce.
Serve cooked fillets with a dollop of Horseradish Cream on top. Garnish with a pinch of chopped green onion, pepper, or dill weed sprinkled on top.
Serving suggestion: Serve with brown rice and sauteed green beans or asparagus.
