Ingredients

    4.0 serving pork chop boneless thick cut 4oz.
    2.0 tbsp Olive Oil
    3.0 tbsp chopped Shallots
    2.0 tsp Garlic
    8.0 tbsp, drained Capers, canned
    4.0 fl. oz Sherry, dry
    0.25 cup Chicken stock, home-prepared
    3.0 tsp Grey Poupon Dijon Mustard
    2.0 tbsp Cream heavy 1 TBSP

Directions

Preheat oven to 200. Pat chops dry, and sprinkle both sides with salt and pepper. In a large skillet heat oil over medium high heat. Add chops and sear on both sides, about 4-5 minutes each side. Transfer to oven to keep warm. Remove all but 1 tsp oil from skillet and reduce heat to medium. Add shallots and garlic and cook until soft, 2-3 minutes. Add capers and cook for 30 seconds. Add sherry and cook until slightly reduced, about 2 minutes. Add stock, mustard, and a pinch of salt and pepper. Cook until slightly thickened, about 2-3 minutes. Stir in the cream. Place chops on plate or platter and drizzle with sauce. Serve remaining sauce tableside. Makes 4 servings. Recipe from Kris Longwell
