Ingredients

    5.0 cup green giant cauliflower rice
    1.5 cup Black Beans - canned - Kroger
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    3.0 clove Garlic
    0.25 cup Tomato Paste
    4.0 serving Amy's Kitchen Medium Salsa, 2 Tbsp
    1.0 tsp Paprika
    1.0 tsp Cumin seed
    0.5 tbsp Chili powder
    1.0 tbsp Extra Virgin Olive Oil

Directions

Cook cauliflower rice according to package directions (or make your own= ). Saute red onions in olive oil. Once cauliflower is cooked add to pan with onion and olive oil. Mix in the remainder of ingredients and cover. Let 'steal' on low heat for about 20 min or until tender and flavorful.
