Ingredients

    1 tbsp olive oil
    1/2 head, medium cabbage, chopped
    1 cup, diced Celery, raw
    1 cup, chopped Onions, raw
    1 cup, chopped Carrots, raw
    3 cloves Garlic
    4 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
    1 14.5 oz can diced tomatoes, no salt added
    1 14.5 oz can green beans, No Salt Added
    1 large tomato, diced
    1 tbsp Dried Oregano
    1 tbsp dried Parsley
    1 tbsp dried Basil
    1/2 tsp Kosher Salt
    1/2 tsp black Pepper

Tips

Use vegetable broth for vegetarian. Can use fresh or frozen green beans.


Directions

In large stockpot over medium heat, saute diced onions, carrots, and celery in olive oil until softened. Stir in minced garlic.
Stir in chicken broth, tomatoes (canned with juice and fresh diced), chopped cabbage, and spices, salt and pepper.
Bring to boil, reduce heat, and simmer for 25 minutes. Taste and adjust seasonings if necessary.
Refrigerate leftovers.
