Introduction

I invented this to use up some coconut sugar and coconut chips and they are very tasty. I invented this to use up some coconut sugar and coconut chips and they are very tasty.

Ingredients

    1 cup coconut sugar, Madhava" Organic (1 t)
    One 1.4 packet Coconut Beach coconut chips
    1.0 cup Flour, white
    1 cup Old Fashioned Quaker Oatmeal- Plain
    1.0 large Egg white, fres
    1 stick Blue Bonnet Margarine
    1.0 tsp coconut extract
    1.0 tsp Vanilla Extract
    1.0 tsp Salt
    1.0 tsp Baking Soda

Directions

Preheat the oven to 350 degrees. Next, cream together margarine with the coconut sugar. Once that is light and fluffy, add the egg, extracts, salt and baking soda and stir until well combined. Stir in the flour and oatmeal until mixture has completely combined. Using a small one ounce scooper, place balls of dough on a parchment lined baking sheet approximately two inches apart. Bake for 8 to 10 minutes until golden brown and delicious.
