Ingredients

    3 medium (7" to 7-7/8" long) Banana, fresh
    0.3 cup Butter, salted
    1 tsp Baking Soda
    0.75 cup Granulated Sugar
    1 large Egg, fresh, whole, raw
    1 tsp Vanilla Extract
    1.5 cup Flour - Gold medal all purpose flour
    1 tsp Cinnamon, ground
    1 cup, chopped Pecans

Directions

1. Preheat oven to 350 and butter a 4X8 loaf pan.
2. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the bananas.
3. Mix in the bang soda and a pinch of salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour. Mix in the chopped nuts if desired.
4. Pour batter into prepared loaf pan. Bake 1 hour or until tester inserted into center comes out clean.

Serving Size: Makes 1 loaf (8 slices per loaf)
