Introduction

Finally a recipe that I whipped together that tastes like the real carb filled ones we grew up on! Just add sugar free syrup and you won't notice the difference nor will you feel tired or heavy after eating them! Ingredients

    1/2 cup arrowhead mills coconut flour

    5 large Egg, fresh, whole, raw

    4 tbsp serving Great Value No Calorie Stevia in small plastic container

    1 1/2cup Heavy Whipping Cream
    1 tsp Vanilla Extract
    1 tsp Canola Oil
    1 tsp Cinnamon, ground
    1 tsp Baking Powder
    0.5 tsp xanthan gum
    Splash of water, about 1tsp

Directions

Mix the dry ingredients together until well combined. Then add vanilla, eggs, whipping cream and oil until smooth.. Batter should be thicker like regular pancake mix but not too thick. If needed add a splash of water and a little more heavy whipping cream. Let batter set for a minute. The best method for cooking is taking a large baking/cookie sheet, spreading the batter along the pan and baking at 400 for 12-15 minutes depending on the stove. Let set for a minute and cut into squares or take a cup and make round ones! I tried frying with a nonstick pan with and without oil but the pancakes would burn on one side before being able to flip. This method gets a nice golden brown and is a lot easier!
