Ingredients

    1 pound raw beets
    1 pound raw carrots
    Juice of 2 limes (about 1/4 cup)
    8 tbsp Natural Peanut Butter (Dry Roasted Ground Peanuts)
    1 tbsp Soy Sauce
    0.167 tbsp Trader Joe's Toasted Sesame Oil
    1 tbsp Honey
    2 clove Garlic, minced or microplaned
    1-2 Tablespoons microplaned fresh ginger
    0.33 tsp Salt (use 1/4 to 1/2 teaspoon, to taste)
    5 scallions, cleaned and finely sliced

    Hot water (see instructions)


Tips

Vegetables will soften as this sits in the fridge.


Directions

Shred or spiralize 1 pound each of peeled raw beets and carrots.

Combine remaining ingredients except scallions. Add hot water until the dressing becomes the consistency of heavy cream. Toss with shredded beets, carrots, and scallions.

Serve topped with a protein, or on its own.
