Ingredients

    3 cups whole wheat farfalle, uncooked
    1 lb asparagus spears, cut into 2-inch lengths
    4 oz snow peas, trimmed
    3/4 cup Fat-Free Italian Dressing
    2 tsp dried oregano leaves
    1/2 tbsp grated lemon zest
    1 lb cooked medium shrimp
    1 cup halved grape tomatoes

Directions

Bring a large pot of UNSALTED water to a boil.
Add pasta, cook 6 minutes before adding asparagus. Cook 3 minutes longer.
Add snow peas to the pot, and immediately drain all ingredients.
Mix dressing, oregano and lemon zest.
Pour pasta and vegetables into a large bowl.
Add dressing mixture, shrimp and tomatoes, toss.
Refrigerate at least 1 hour, or until ready to serve.

    This was sooooo good! I substituted the shrimp for mild Italian Sausage and used a bag of frozen asparagus stir-fry vegetables. This was very easy to prepare and I'll freeze the rest for later this week! Thanks for sharing! - 7/27/08
