Ingredients

    .25 cup Parmesan Cheese, grated
    .5 cup Pork rinds
    2 large Egg, fresh, whole, raw
    3 cup, sliced Zucchini

Directions

Cut Zucchini into french fry sized strips.
1. Preheat oven to 425. Line a baking sheet with aluminum foil and spray with cooking spray.
2. Stir pork rinds and parmesan cheese together in a shallow bowl. Whisk eggs in a separate shallow bowl.
3. Working in batches, dip zucchini into egg mixture, shake to remove any excess, and roll strips in pork rind mixture to coat.Transfer zucchini strips to prepared baking sheet.
Bake zucchini fries in preheated oven, turning once, until golden and crispy, 20 to 24 minutes.
