Introduction

Inspired by lunch bought at a grocery store, this is a combo that I threw together out of a bunch of my favorite stuff. I measured in grams, so other measurements are approximate. Ingredients

    132 grams fresh Broccoli, chopped small (1 crown)
    114 grams yellow bell pepper, chopped fine (1 small)
    128 grams matchstick Carrots, about 1/2 of a 10-oz pkg
    78 grams Red Onions, chopped very small. (about 2/3 cup)
    138 grams Blueberries, fresh (about 1/2 pint)
    1.5 cup Edamame, Shelled, Frozen (1 bag)
    150 grams Kale, chopped fine and washed.
    114 grams Yellow Peppers (1 small)

Tips

Any "superfood" you like would work in this. I would recommend grape tomatoes, cranberries, and feta or goat cheese.


Directions

Prepare edamame per pkg directions, and set to coo.
Chop kale finely and put in colander to rinse.
Chop all the other stuff and mix in a BIG bowl.
Serve with creamy dressing (I love Bolthouse Farms coleslaw yogurt dressing. It's with the refrigerated dressings.) I prefer waiting until serving and mixing dressing in just enough for that serving.)
