Ingredients

    2 Large Eggs Beaten
    1/2 Cup Honey
    1/4 C LOL Light Butter (sticks)
    1 Cup Grated Fresh Carrots
    1 Cup Welch's Berry Medley Dried Fruit
    1/3 Cup Chopped Dried apricots
    1 cup chopped walnuts
    1 Cup all purpose flour
    1 Cup Publix Old Fashioned Rolled Oats
    2 Indiv. Serv. Boxes Cheerios 5/8 oz each
    1 teaspoon ground cinnamon
    1/2 tespoon ground nutmeg

Directions

Combine Egg, honey and softened butter
Add dried fruit, nuts and carrots
Stir to combine

In a separate bowl Combine flour, oats, nutmeg, and cinnamon, add this to the "wet" mixture" and stir until everything is moist.

Fold in the cheerios

Spay cookie sheet with Pam. Drop well rounded tablespoons (flatten down a little as they do not spread out much at all)

Bake at 350 for 15 minutes

Makes 30 - 1 cookie is one serving

    Very Good
    Made these today, they are very good. I did not have apricots so didn't add them but did try to make them without the butter so substituted with applesauce. Husband loved them as well. Thank you - 2/21/09
