Ingredients

    54 jumbo pasta shells
    16 oz fat free cream cheese
    24 oz fat free cottage cheese
    4 cups fat free shredded Mozzarella cheese
    1 tbsp olive oil
    1 onion, chopped
    10 oz shredded carrots
    16 oz mushrooms, chopped
    4 cloves garlic, minced
    1 Tbsp Italian seasoning
    16 ounces spinach, chopped
    2 packages Gardein Meatless meatballs, cooked and chopped
    3 jars Prego light smart marinara sauce1 tbsp Extra Virgin Olive Oil

Directions

Preheat oven to 350.
Cook jumbo shells according to package, decrease cooking time to make sure shells are al dente. Drain and rinse in cold water.
While shells are cooking, place 1 tbsp olive oil in nonstick pan with onions and carrots, saute until starting to soften. Add mushrooms and garlic. Continue cooking until garlic is fragrant. Add chopped spinach, cook until spinach is wilted. Let cool.
In a bowl, mix cream cheese, cottage cheese, and Mozzarella cheese. Add vegetable mixture and meatless meatballs. Combine.
Using a spoon, stuff the shells with the mixture and place in oven-safe baking dish. Pour pasta sauce on top. Cover and bake for 20 minutes. Serve.

Serving Size: 3 stuffed shells per serving
