Ingredients

    3 cup, sliced Zucchini
    48 oz Ground beef
    1 cup Ricotta Cheese, whole milk
    8 oz Mozzarella Cheese, part skim milk
    5 cup Classico Vodka Sauce
    1 serving Egg white, large
    24 tsp Parmasan Cheese (by WANT2BURN)

Tips

The thinner you slice zucchini the faster it will cook. Thick slices will lead to a watery dish.


Directions

Brown ground beef and drain, mix in vodka sauce and simmer while assembling remaining ingredients. Shave zucchini long ways into thin strips and set aside. Mix egg, parmasan and ricotta together (I like to add garlic pepper and parsley to this.) Start layering in 9x13 pan, sauce mix, zucchini, small dollops of ricotta and then sprinkle mozzarella, continue layering and finish with mozz and parmesan. Bake at 350 for 30-45 minutes then allow to cool 10 mins.
