Ingredients

2.6 lb Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw
1 large Onions, raw
4 clove Garlic
8 tbsp Diced Green Chilie (by GOALAGAIN)
9 tsp Ginger Root
1 tbsp Curry powder
.5 tsp Turmeric, ground
.25 tsp Pepper, black
0.25 tsp Goya Adobo (All Purpose Seasoning) (by TIARENEE)
1.75 cup Del Monte Petite Cut Diced Tomatoes
1.63 cup A Taste of Thai Coconut milk (by HYPNOTURKEY)
3 cup Better Than Bullion (1 cup prepared) (by AZMELODY)
3 tbsp Olive Oil
1 tbsp cumin powder (by DUBON00)
Tips
Optional ingredients: green chilie, salt, cilantro & scallions.
Directions
Cube the pork into appx 1" pieces. Heat olive oil in skillet over a medium high heat. Add a portion of pork & brown. Placed browned pork into a slow cooker. Repeat until all of the meat is done.
Return skillet to heat & add in chopped onion, chopped garlic and the chopped ginger. Cook over low heat until onion is translucent. Scrape the mixture into the slow cooker.
Add remaining ingredients to the slow cooker. Mix well.
Cover & cook on high for 4 hours or Low for 8 hrs.
Top with chopped cilantro & green onions, if desired.
Serving Size: Serving size is 1 1/3 cups.
