Introduction

Ingredients

6 T Butter, unsalted
6 T Gluten free flour
1-2 T Chili powder
1 t Ground cumin
1.5 c Chicken stock, home-prepared
1 t Smoked Spanish paprika
1/2 t Garlic powder
1 t Kosher Salt
3 t Granulated Sugar
1 can (28 oz) Pureed Tomatoes
1-2 T Half and Half Cream or heavy cream (optional)
Directions
In a medium heavy-bottom saucepan, melt butter over medium heat. Add flour, whisk until well combined and smooth.
Whisking constantly, slowly add chicken stock. Continue to cook, whisking frequently until the mixture begins to bubble and thicken (about 1 minute). Add chili powder, cumin, paprika, garlic powder, salt, and sugar. Whisk to combine well. Add tomato puree and whisk, then stir until well combined.
Add optional cream to thin as necessary to adjust the heat in the sauce. Taste and add more spices to suit taste.
Serve immediately or cool to room temperature, transfer to a sealed container and store in the refrigerator for up to a week or in the freezer. Defrost by running under warm water before heating and serving.
