Ingredients

    4 cup Spaghetti Squash
    .5 stick Butter, unsalted
    2 tsp Curry powder
    .5 tbsp chopped Shallots
    100 grams Cilantro, raw
    2 tsp Lemon Peel
    .33 cup Pine Nuts

Tips

Great on its own for lunch


Directions

Pierce skin of squash to let steam out and roast at 400 F for approx 90 minutes. Let cool for 20 min.
While roasting squash, mash butter, curry powder, shallots, zest and cilantro in a small bowl. Add salt & pepper to taste.
Cut squash in half, scoop out the seeds and with a fork pull the fibers away from the skin. Transfer to a larger bowl and top with curry butter and toss. Add salt & pepper if desired. Yop with pine nuts.
