Introduction

This is a "quick" and easy meal to prepare, packed full of veggies, you could add pretty much anything you wanted. This is a "quick" and easy meal to prepare, packed full of veggies, you could add pretty much anything you wanted.

Ingredients

    2 zucchini cut into rounds
    6 winter squash cut into rounds
    1 bunch baby bok choy
    1 sweet pepper
    6 brussel sprouts cut in half
    1 garlic clove sliced
    4 lamb shanks cut in 1/2
    4 cups vegetable stock

Directions

Cut all the vegetables and put in the slow cooker add the meat and the stock and turn on slow cooker. This takes 8 hours to cook and serves four so it's brilliant to put on before you go to work as there is no stirring required
