Ingredients

    4.0 cup White Rice, long grain, cooked
    1.0 serving 1 Med. Green Bell Pepper, chopped into 1/2-1/4 inch square pieces. **This depends on how much you like the taste of bell pepper. The smaller the pieces of bell pepper, onion and celery the less you'll see and taste them individually.
    4.0 stalk, large (11"-12" long) Celery, raw, chopped into 1/8 incsh half moon slices
    1.0 cup, chopped Onions, raw
    4.0 serving(s) johnsonville andouille sausage, cut into 1 inch pieces then quartered and halved.
    12.0 oz Shrimp, cooked, remove the tail and cut into pieces roughly the size of the sausage.
    4.0 serving(s) Boudreaux''s crawfish tail meat
    4.0 serving(s) Slap Yo Mama Cajun seasoning
    1.0 tbsp Extra Virgin Olive Oil
    30.0 grams Cilantro, raw
    4.0 serving Green Onion (fresh-1 stalk)

Directions

Cook rice and set aside. Heat oilve oil in pan, saute sausage. I like to get some brown on the edges. Remove from the pan and set aside. Add onion, bell pepper ( I sometimes add a bit more red bell pepper for color) and celery. Saute veg until translucent, add the cajun seasoning. Add the shrimp and sausage to the veg and then add the whole bag of crawfish tail meat (4 servings). Stir veg and meat together until all are well mixed, and then add the rice, cilantro and green onion and mix well. Heat for 4-6 minutes or until all ingredients come together. Sprinkle with additional green onion and cilantro. NOTE: Add additional seasoning as needed for your taste. Our family likes to add a tablespoon or two of Louisiana Red Pepper sauce (or Frank's Red Hot Original) for added heat and acidity. Also, feel free to add juice of a lemon.
