Ingredients

    1 cucumber, diced
    1 c Cherry or grape Tomatoes, halved
    1/2 cup Pomegranate seeds
    4 c packed Mesculin / Spring Salad Mix (or romaine or other greens), chopped
    2 Tbsp Lemon Juice
    2 Tbsp Lime Juice

    Other seasonings:
    Fine zest of 1 small lemon
    Pinch of sumac
    Handful of fresh parsley leaves, chopped
    Fresh mint, chopped, or a tsp of dried
    Salt and pepper

    May add olive oil but I did not.

Tips

Most recipes suggest adding broken pita chips. Calculate separately if using.
This salad is so fresh and tart.


Directions

Clean and chop ingredients and toss together.

Serving Size: Makes about 4, 1.5c servings
