Number of Servings: 8


    3 cup Milk, whole
    1 cup Medium / fine Coconut Unsweetened
    .5 cup Flour - Gold medal all purpose flour
    .25 cup Granulated Sugar
    .25 tsp Salt
    2 large Egg Yolk
    2 tbsp Butter, salted
    .5 tsp Vanilla Extract


It is best to have everything measured out and ready before starting to cook the filling. It take 100% of your attention and time for perfection.


Make 9" pie shell and bake at 425 oven till golden brown.
Follow directions to make filling

Heat Milk & coconut together until milk is scalded.
While that is doing its work on the stove, measure everything else into separate bowls. Everything is time sensitive while you work.
Measure sugar, salt & flour in bowl & set aside.
Cut piece of butter & get vanilla out & whip egg yolks up in small bowl.
When milk & coconut is scalded, gradually add some into the flour, sugar mix and whisk hard until all lumps are smooth.
Add this mix to the pot on medium heat and stir constantly until the mixture starts to thicken.
Cover and cook 2 min. longer, stirring occasionally.
Stir a small amount of hot mix into the egg yolks and whisk smooth
Blend into remaining hot mixture.
Cook 1 min longer, stirring constantly
Remove from heat and blend butter & vanilla
Cool to luke warm and pour into baked pie shell
If you like meringue, top with it OR I like to sprinkle toasted coconut on top instead.
