Introduction

This has been a special family recipe for as far back as I recall. It is more like a soft cake than the usual hard gingerbread, but it is always a delicious treat! Number of Servings: 72

Ingredients

    GINGERBREAD
    7 cup White Lily Self-Rising Flour
    1 cup Granulated Sugar
    1.5 cup Milk - Whole
    10 large Eggs (separate 7 egg whites and set aside)
    8 tbsp Canola Oil
    8 tbsp Molasses
    6 tsp Ginger, ground

    GLAZE
    2 cups sugar
    7 egg whites



Directions

Preheat center to 400 degrees. Lay out a brown paper bag and cover with generous amount of flour. Mix all gingerbread ingredients together and pour out onto paper bag. Cover your hands and the batter with flour. Pinch the batter into small pieces, shape into little cakes and place on greased cookie sheet.

Bake for 10 minutes on top rack...watch carefully as gingerbread burns easily. Brown the top of the gingerbread on “broil” for about 1 minute or until it is lightly brown.

Mix glaze ingredients and apply to both sides of warm gingerbread with a brush or cloth.

Serving Size: Makes about 72 little cakes

    It is several ingredients but makes a lot! Usually it is split up among all my family members who love it! You could split it in half to make less. Hope you try it and love it like we do!
