Ingredients

    470.0 gram(s) Hannaford Eastern Russet Premium Potatoes, (med potato)
    150.0 gram(s) Egg - Egg Land's Best Organic Eggs (1 egg = 50 grams)
    2.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    0.5 serving 1 Med. Green Bell Pepper
    74.0 gram(s) bell pepper, red, sweet, raw
    40.0 gram(s) Millet Flour, Bob''s Red Mill
    1.0 dash Salt
    1.0 dash Pepper, black
    0.5 tsp Cumin seed
    0.5 tsp Oregano, ground
    0.5 cup, chopped Onions, raw
    0.3 cup Olive Oil

Directions

Grate potatoes, 1/2 a medium large onion, and rough dice 1/2 each red yellow and green bell pepper. Stir in three eggs, the millet flour, and the seasonings. I think I could've used a lot more seasoning but didn't want to overdo it. While you are grating, have a large shallow pan heating over medium low, then when you are stirring in the eggs and flour add about 1/3-1/2 olive oil to the heated pan to pan fry these. There will be oil left when all are cooked, which is why I put down 1/3 cup. Put blobs of latke good into the hot oil and cook about 3 minutes a side, give or take. As latkes become browned and crisp on both sides, remove onto a paper towel lined plate.
