Ingredients

    6 large Egg, fresh, whole, raw
    1 cup Egg White--All Whites 100% liquid egg whites
    1/2 Red Bell Pepper (chopped)
    1/2 cup Mushrooms, canned
    1 cup Spinach, fresh (chopped)
    1/2 cup, chopped Onions, raw
    salt and pepper to taste.
    1/2 cup Colby & Monterey Jack Finely Shredded Cheese (Happy Farms - Aldi)

Directions

1 - preheat oven to 375 degrees and spray muffin tin
2 - beat eggs, egg whites, salt and pepper until combined
3 - spray skillet with non-stick spray
4 - saute onion, pepper and mushroom for 2-3 minutes on medium heat
5 - add chopped spinach and cook just until wilted
6 - spoon onion mixture into muffin cups
7 - ladle egg mixture over veggies
8 - sprinkle with cheese
9 - bake for 17-20 minutes, or until toothpick inserted comes out clean
10 - cool and store in fridge. when ready to eat, microwave 20-30 seconds
