Introduction

This samw dough can be used for Empanadas, Hallacas, Hallaquitas, Tamales, Tortillas, Gorditas, Polenta, and I am sure there is more.

This is not included in this recipe, but I sometimes add some brown sugar. The proportion is probably close to 3tbsp to this recipe.

Ingredients

    2.5 cups warm water
    1tsp salt
    2 cups PAN Corn Meal

Directions

add salt to water and mix.
slowly add the corn meal to the water and work through to make sure there are no clumps.

You want the dough to not be too try, but you dont want it mushy or sticking all over you fingers.

I've take about a soup spoon full of dough and worked it in to the size of a small pancake about .25in thick. You can either bake these, or deep fry. I have an arepa maker (think similar to waffe iron/maker) so no extra oils/fats on mine.

If baking - heat oven to about 300deg and place on cookie sheet for aprox 30-45 min. To tell that these are done, place in hand and pat it. If it sounds empty - its done.

If making empanadas, you can fill with chicken, beef, pork, cheese (any combination of the above). I've deep fried before, and also baked them as well.

I've served arepas with Underwood Deviled Ham, deli ham/turkey, cheese, butter, eggs... may possibilities.

Serving size is approx. Depending how big you make the arepas to begin with...

    Incredible!
    I used the same amount of dough to make 6 arepas. I filled with platanos and beans with guasacaca sauce. Yum! They turned out great! - 6/28/11
