Introduction

Ingredients

    4 oz cooked fish - flaked
    2 oz Tortilla Chips - crushed
    2 cups fresh coleslaw mix
    2 stalks green onions - chopped
    10 cherry tomatoes - halved
    2 tbsp Mayonnaise, regular (mayo)
    1 tsp. honey
    1 tsp. lime juice (or more to taste)
    1 Tbs. fresh chopped cilantro or 1/8 tsp. dried
    1/8 tsp Tajin seasoning
    Salt & Pepper to taste
    Tapatio to taste.

Directions

Mix together mayonnaise, honey, lime juice, cilantro, Tajin and salt and pepper. Taste and adjust seasoning accordingly. Add dressing to coleslaw mix, green onions and tomatoes. Toss to coat and let sit to combine flavors. If it seems too dry, add a little plain yogurt (about 1 Tb.). Divide among two plates and top with crushed tortilla chips. Top with a few dashes of Tapatio (optional).
