Ingredients

    3 cup split peas
    9 cup vegetable stock
    2 tsp ground turmeric
    1 tsp salt

    4 tbsp olive oil
    2 clove garlic
    4 cup (4 medium) chopped onions
    1 tsp cumin
    2 tsp ground turmeric (That's right, in addition to the 2 tsp you used already)
    1 tsp black pepper

    2 cup (1 13.5 oz can) light coconut milk

Tips

Serve as a side dish, or with rice and/or yogurt.
For a lighter, less sweet version of this dish, substitute 1 cup chopped tomatoes for the coconut milk.


Directions

Cook the 1st 4 ingredients together until the peas or lentils are tender but not mushy, about 25-30 minutes.
Drain the liquid when done, but reserve it.

Sautee the rest of the ingredients except the coconut milk, stirring continuously, until the onions are tender
Add in the drained peas or lentils and reheat gently. Stir in the coconut milk and continue to heat. If it seems too thick or dry, add in some of the reserved stock.


Serving Size: Makes 12 servings of 3/4 cup
