Ingredients

    16 oz Simple Truth Organic Grass Fed Ground Beef
    3 serving Extra Large egg, fresh (1 egg)
    1 tbsp Garlic powder
    1 dash Salt
    1 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    0.5 cup Breakstone's cottage cheese 4%
    1 cup Marinara Sauce, Rao's Homemade (by ERMOTH)
    1 cup Mozzarella Shredded Cheese - Aldi's Happy Farms
    .25 cup, chopped Onions, raw
    12 slice (1-3/8" dia x 1/8" thick Pepperoni
    1 serving Black Olives - Sliced (2 Tbsp.)
    12 slice Mushrooms, fresh

Directions

Preheat oven to 425 degrees. In a skillet, melt coconut oil or your choice of cooking fat and sautee the ground beef, adding salt and garlic powder to taste. In a bowl, beat the eggs and mix in about a quarter of the mozzarella cheese. Mix in the cooked ground beef quickly stirring to ensure the egg does not scramble from the heat. Press egg, cheese, and beef mixture into a casserole dish evenly. Cook in oven for 15 minutes until solid. Using a stick blender, cream the cottage cheese into a smooth texture like ricotta. Remove casserole from oven and top with marinara sauce, remainder of cheese, onions, pepperoni, mushrooms, and olives. Dollop creamed cottage cheese on top evenly. Broil in oven for approximately 3-5 minutes until cheese has melted and toppings are crisped. Remove from oven and let sit for 5 minutes before slicing and serving. Top with grated parmesan (not included in recipe), if desired.
