Introduction

These are crumbly cookies that are filling, healthier, but still satisfy a cookie craving. They are not super sweet. The peanut butter and chocolate flavor comes through. I use "cup for cup gluten free flour" if you use regular rice flour you may want to add a pinch of xanthum gum and/or extra soda. Ingredients

    .25 cup Butter, salted
    .25 cup Peanut Butter, smooth style, with salt
    .25 cup, packed Brown Sugar
    1 large Egg Yolk
    .33 tbsp Milk, 3.25%
    .5 tsp Vanilla Extract
    1 tsp Baking Soda
    Pinch of Salt
    3 Tbsp Rice flour, white
    3 Tbsp Bob's Red Mill Coconut Flour (by BABYHUNT)
    0.33 cup Quaker Oats 100% Whole Grain Quaker Oats - Quick
    .125 cup, chopped Walnuts
    25 gram (1/4 of bar) CHOCOLATE bar - dark 70% cocoa Moser-Roth


Tips

I use a gluten free baking mix ("cup for cup"). if you use plain rice flour you may want to add xanthum gum and/or extra soda.


Directions

Preheat oven to 350 degress. Chop walnut and chocolate. Cream butter, PB, and sugar until fluffy. Add egg, milk, and vanilla and beat. Stir in pinch of salt, baking soda, both flours. Finally stir in oats, chocolate and walnuts.
Put on baking sheet and bake 12-15 mins.

Serving Size: makes 6 large cookies
