Ingredients

    4 Eggs, large
    1 large Onion, diced
    1/2 package (10 oz) Spinach, fresh
    1/2 cup Flour - Gold medal all purpose flour
    1/2 tsp Baking Powder
    Dash Ground Cayenne Pepper (Powder)
    1 1/3 cup Milk, nonfat (skim milk)
    1/2 cup, crumbled Feta Cheese

Directions

Heat oven to 400 degrees

Grease quiche Pan or pie plate with cooking spray.

Caramelize onions slowly over low heat in skillet (about 20-30 minutes). I use a little pat of butter but you can use no calorie spray.

Once onions are deep brown and tender, add spinach just to wilt. Remove from skillet and let cool briefly.

In mixing bowl beat eggs. Add flour, baking powder, cayenne pepper (dash to taste), and skim milk. Mix well.

Add spinach mixture to egg mixture, mix well. Pour into quiche pan or pie plate. Top with feta cheese.

Bake 25-35 minutes, until center is set and edges are beginning to brown.

Let sit 5-10 minutes then cut and serve.

Serving Size: 1/6th or quiche
