If you thought you didn't like cauliflower, try this! It's an awsome treat for a festive table. Beautiful presentation and something out of the ordinary. Can be used as an entree for 4. Ingredients

    1 large head Cauliflower
    1/2 cup seasoned bread crumbs (italian)
    4 Tablespoons graded Parmesan cheese
    1/4 cup margarine, melted
    1/8 teaspoon garlic powder
    1/8 teaspoon salt
    1 pinch red pepper flakes (or more for hot)
    1 pinch dried oregano



Directions

1. Clean cauliflower and trim off leaves and any brown spots. Place the shole head of cauliflower into a steamer baskett, place the basket in a large pot and add one inche of water. Cover, and bring to a boil over medium heat. cook for about 20 minutes or until tender.
2. Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, mix together the bread crumbs, Parmesan cheese, garlic powerder, salt , red pepper flakes and oregano - mix well. Place the head of cauliflower into/onto a baking dish, coat with the Warm melted butter and IMMEDIATELY coat with the breadcrumb mixture. Pat the crumb mixture to make sure it is adhering to the cauliflower. Usually does quite easily.
3. Bake for about 10- 15 minutes in the prehea\ted over, or until golden brown.

Serves 6 as a side dish and 4 as an entree.

    My family loved this. I used the same bread crumbs to make chicken fingers and baked them both in one pan for 15 minutes. Added Ranch dressing for dipping sauce for fingers. One stop dinner and for a total of 364 cal - 162 cal for cauliflower and 202 for 4 oz of chicken. Add cal for dressing. - 8/20/09

    Incredible!
    This was really good. I don't even like cauliflower, and I thought it was the best part of the meal. (I used shredded asiago instead of parmesan, because that's what I happened to have around, but I doubt it was very different.) - 1/22/09
