Number of Servings: 4

Ingredients

    1 tbsp olive oil
    2 tbsp cumin
    1 tbsp pepper
4 boneless, skinless chicken breasts (4-5oz each)
    1 medium onions, diced
1 medium zucchini, sliced in quarters
    2-3 medium tomatoes, diced
1 can chick peas, rinsed and drained
    1 cup water
    2 tsp honey
    1 1/2 tsp Sambal Oelek

Directions

Season the chicken with pepper and cumin powder to taste. Season on both the front and the back of each breast.

On medium-low heat, cook the chicken and onion in 1 tablespoon olive oil for 3 to 4 minutes, stirring and turning occasionally.

Add the tomatoes, chickpeas, and zucchini and stir. Then, mix the Sambal Oelek and honey into the water, and pour evenly over the chicken and vegetables.

Simmer for 15 minutes, stirring occasionally until the sauce slightly thickens, and the chicken is cooked through.

Enjoy!

    Very Good
I liked this! I added more zucchini because that's what I needed to use up, and it seemed like a cup of water was too much so I'll play with that - but I'll definitely make again! Thank you! Ate with some plain greek yogurt to meet the spicy. - 8/2/20

    Incredible!
I’m not sure why a lot of these recipes forget that Water is a measurable ingredient. I don’t know if they’re expecting recipes to get natural water but after draining all of the ingredients there really wasn’t any water to mix in the sauce is in the honey. So just a note, and as a tip I just added - 5/22/20

Ooops! You're totally right - there is supposed to be 1 cup of water used in this recipe. After all the ingredients are in the pan, I mix the water with the honey and Sambal Oelek, and then pour over the whole dish. By the time everything is done cooking, this creates a flavourful sauce. Thanks! :)

    Incredible!
A very filling (and spicy!) dish. I served with rice, but could easily be paired with a side salad for a lighter option. Will definitely make again! - 5/11/20
