Ingredients

    12 oz Finfish, cod, Pacific, raw
    2 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    .75 cup Parmesan Cheese, grated
    .12 tsp Garlic powder
    .25 tsp Salt
    .25 tsp Pepper, black
    1 large Egg, fresh, whole, raw
    4 serving Spray oil - Pam Olive Oil (.4sec spray) (by NEW_CHAPTER)

Directions

Preheat oven to 400 degrees. Spray a baking sheet with a generous amount of cooking spray. Cut fish into 8 equal pieces, salt lightly, and place on a paper towel. Cover with several paper towels and pat the fish dry.
Place Process all of the dry ingredients in a food processor until completely mixed.
Beat the egg in a bowl. Dip each piece of fish into the egg.
Dip the egg coated pieces of fish into the almond parmesan mixture.
Place the fillets onto the prepared baking sheet. Be sure they do not touch. Add any of the leftover mix to the top of the fish fillets. Spray the tops with cooking spray and place into the center of the preheated oven for 10 - 15 minutes until golden brown.
