Introduction

Ingredients

6 Perch Fillets
1/2 cup Corn Starch
1 Egg
1/2 can Beer (4 oz..)
4 tbsp EVOO (Extra Virgin Olive Oil)
6 Corn Tortillas
1 1/2 cups (Green) Cabbage, shredded
3 tbsp Plain Yogurt
3 tbsp Salsa
2 Limes, quartered
Directions
Makes 6 tacos
1) Cut perch fillets in half and set aside. Place corn starch in one bowl, and combine egg and beer in another bowl. Place frying pan over medium-high heat and add EVOO. Dip fish in wet mixture, then coat in starch. Place in frying pan for about 3 minutes on each side, or until golden brown.
2) Warm tortillas. Add fish, 1/2 tsp yogurt, 1/2 tsp salsa, and top with cabbage. Finish with squeeze from a quarter of lime. Enjoy!
