Introduction

Finally a great granola bar. Hearty, tasty, satisfying, clean and healthy. I set up the recipe for 24 bars but if you are looking for a great breakfast bar to take along, eat two of them for 250 calories. I am surprised the calories are so reasonable with all the wonderful ingredients. So if you want to change up the nuts and fruits, have at it! Finally a great granola bar. Ingredients

    2 1/2 cups (2.5 cup) Rolled Oats
    1/4 cup (.25 cup) hulled Sunflower Seeds, without salt
    1/4 cup (2 oz) Almonds, Slivered
    1/4 cup (.25 cup) Honey
    1/4 cup (.25 cup) Maple Syrup
    1/4 cup (.25 cup) Coconut Oil
    1 tsp Vanilla Extract
    1/4 tsp (0.25 tsp) Kosher Salt (by 65PLUS1)
    1/4 tsp (.25 tsp) Cinnamon, ground
    1/4 tsp (.25 tsp) Nutmeg, ground
    1/4 tsp (.25 tsp) Ginger, ground
    Pinch (.1 tsp) Cloves, ground
    1/2 cup (.5 cup), Chopped Pecans
    1/2 cup (8 tbsp) Dried Cranberries
    1/3 cup (0.33 cup) Dried Cherries
    Zest of one lemon or half of an orange which ever you desire.

Tips

Use whichever spices you prefer to flavor the bars and change it up from season to season. I love the "chai" flavor of spices together as plain cinnamon gets too boring for me!


Directions

Place oats and nuts that have not been toasted on a baking sheet. Bake 350 degrees 12 minutes. Make sure to watch so the nuts don't burn or you will ruin the bars. You can always buy toasted nuts or toast the nuts separately.
Place this mixture in a large bowl. Add the spices, lemon zest, salt and other nuts and fruits.
Melt the syrup in saucepan including the honey, coconut oil, vanilla, maple syrup.
Mix it into the oat mixture well so all oat mixture is well coated.
Using 8" x 8" metal pan, put a little grease in the pan and line with parchment so parchment hangs over the sides.
Press oat mixture into the pan really well. It's recommended you use the side of a bowl or dish to press it into he pan really well so the mixture is tight and does not fall apart when you cut into it.
Bake 350 degrees for 15 minutes.
Cool on rack in the pan. When it's completely cooled, pull it out of the pan with the parchment paper and cut into bars.
Wrap each bar tightly in wrap or plastic bag. Store in refrigerator or in freezer. Enjoy!
