Ingredients

    1 cup Carbquik flour (by MOOKIELOO6)
    0.5 tsp Pure Lemon Extract (by MOKONA)
    0.25 cup Lemon Juice
    1 large Egg, fresh, whole, raw
    1 tbsp Extra Virgin Olive Oil
    1 tsp Baking Powder

    OR

    1 cup carbquik baking mix
    1/2 tsp pure lemon extract
    1/4 cup lemon juice
    1 egg
    1 tbsp oil
    1 tsp baking powder
    2 tbsp water
    2 tbsp sugar substitute
    pinch of salt

Tips

these average out to 1.3g net carb per mini muffin. if you use a regular muffin tray then net carbs is 2.2g per muffin

its usually best to combine all wet ingredients first and then add in the dry.

do not over mix

if you use silicone muffin tray there is no need to oil them


Directions

Beat egg, then add rest of ingredients, stir to combine

Preheat oven to 400
Bake 15 to 20 minutes
15 minutes for mini muffins and 20 minutes for regular sized
