Ingredients

    6 cup Brown Rice, long grain
    1 large Onions, raw
    0.75 cup slices Carrots, cooked
    1.5 cup Peas, frozen
    5 large Scrambled Egg
    6 oz Chicken, Costco Rotisserie Chicken (3oz/85gm)
    2 tbsp Eden Selected Toasted Sesame Oil
    20 tsp Bragg Organic Coconut Liquid Aminos (1tsp= 5ml) (by DANAGIRL23)

Tips

This recipe takes about two hours but only because whole grain brown rice takes about an hour to cook to al dente. Chill rice after cooking before starting to assemble other ingredients. Add chilled rice and rotisserie chicken last.


Directions

Cook rice in chicken broth according to package directions. Cool in refrigerator. Sauté onions, frozen peas and steamed carrots until al dente cooked. Push vegetables to side of pan and add 5 beaten eggs to other half. Pepper and a pinch of salt. Cook until scrambled. Mix into vegetables. Add cooked chicken torn into bite sizes and 6 cups rice. (Save remaining rice for another recipe). Sprinkle thoroughly with coconut aminos. Combine. Cover and heat on medium until rice and chicken are warmed through. Serve hot.

Serving Size: Makes 10 1 cup servings
