Introduction

Ingredients

    1 tbsp Extra Virgin Olive Oil
    91 grams Onions, raw
    7.1 oz Tomato, grape (3oz = appro 12 tomatoes)
    526 gram Zuchinni, fresh, raw
    2.3 oz Cheese Feta Crumbled President 1 oz (28g) = 70 cals 1 inch cube
    1 tsp Oregano, ground

Tips

I generally make this in the afternoon, have a small serving of it, then refrigerate it. It is added to meals for the next couple of days (there are only two of us). I use lemon olive oil (not infused, but the kind where the olives and lemons are pressed together). Brightens it up a bit. You could also just add a slice or squirt of lemon upon serving.


Directions

Heat olive oil in pan about three minutes med-high heat, saute onions (I prefer large size slices) for about one or two minutes, slice cherry tomatoes partway through to prevent explosions and add to onions. Saute for about 2 minutes covered. Remove cover and add sliced zucchini (slice in 1/2" slices, then cut those in half). Stir a bit, then cover and saute another 3 minutes or so. Add oregano, S&P to taste, and feta. Stir it all up and remove from heat.
