Ingredients

    2 ear, medium (6-3/4" to 7-1/2" Sweet Corn, Fresh
    1 cup Sour Cream, reduced fat
    2 tbsp Basil
    0.75 cup Flour - Gold medal all purpose flour
    .5 cup Yellow Cornmeal
    2 tsp Baking Powder
    1 1tsp Olive Oil
    2 large Egg, fresh, whole, raw
    salt pepper

Tips

Serve with salsa. Either homemade with fresh garden veggies or store bought.


Directions

Weigh or lightly spoon flour into a dry measuring cup. Combine flour, cornmeal, baking powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl.

Step 2
Combine sour cream, eggs, and 1 tablespoon oil in a bowl, stirring until smooth. Add sour cream mixture, corn, and jalapeņo to flour mixture; stir just until combined.

Step 3
Heat a large nonstick griddle over medium-high heat.

Step 4
Divide corn mixture into 12 equal portions (about 1/4 cup each); shape into patties. Add patties to griddle; cook 6 minutes on each side.
