Ingredients

    1/3 cup Olive Oil
    1 eggplant, peeled (yield from 1-1/4 lb) Eggplant, fresh
    1.75 cup Chickpeas (garbanzo beans)
    2 tsp curry
    1 tsp ginger
    1 tsp powdered garlic

Tips

you can spice to taste, I probably add more garlic and curry. You can also add some spinach at the end and put in the oven until wilted. Serve with naan and plain yogurt.


Directions

Roast eggplant and chickpeas with other ingredients at 425 for approx. 25 minutes. Stir once.
