Ingredients

1 medium (7" to 7-7/8" long) Banana, fresh
0.25 tsp Almond or Vanilla Extract
0.5 tsp Cinnamon, ground
4 tbs oat flour (about 0.5 cup oats finely ground in food processor)
2 tbs Milk, nonfat (skim milk)
1 large Egg
0.25 tsp Baking Powder
Directions
Mix all ingredients very well in microwave-safe bowl. Alternatively, pour batter into silicone muffin or cupcake molds.
Microwave for 3 1/2 minutes on high power. Cake begins to pull away from edge of bowl/mold, and knife stuck into center comes out cleanly when done.
Let cake sit for a few minutes to allow oats to continue to absorb remaining moisture.
