Introduction

Spark had a "featured" recipe today for Broccoli and Cheese soup. I'm a vegetarian, and theirs contained chicken broth. I searched and couldn't find a good vegetarian option on Spark, so decided to share mine. Spark had a "featured" recipe today for Broccoli and Cheese soup. Ingredients

    1/4 cup butter
    1/2 onion, chopped
    1 Tbs jarred chopped garlic (more to taste - I like the roasted garlic)
    10 oz package frozen chopped broccoli
    2 (14.5 ounce) cans vegetable broth
    .5 lb Velveeta - cubed
    1 cup skim milk
    1/3 cup cornstarch
    1/2 cup water

Directions

1. Melt butter in large pot over medium heat.
2. Cook onion and Garlic in butter until softened.
3. Add Broccoli and broth.
4. Simmer until broccoli is tender about 5-10 minutes.
5. Reduce heat, and stir in cheese cubes until melted.
6. Stir in milk.
7. In a small bowl, stir cornstarch into water until dissolved.
8. Stir into soup; cook, stirring frequently, until thickened.

    I used unsweetened original almond milk and leeks instead of skim milk and onion (as our households does not like either) and it was delicious! Very glad to have found this recipe, thanks! :) - 12/3/11

    Thanks for this recipe, it was really good, and so easy to make. I wasn't sure how much was a serving, so I only had a couple cups, but it was very filling. - 10/14/08

    I am glad that you enjoyed it. I don't remember how much is in a serving. The next time I make it, I will measure it out. There are 6 of us in our family and I usually just divide it between us.

    Not vegetarian. Kraft made Velveeta is not a vegetarian cheese. They use Animal Rennent. - 11/9/15

    This was really really good, I just used onion salt and garlic salt just because my children are picky and it was still awesome! Thank you, my kidos love it as well. So easy!! yeay! - 12/4/11
