Introduction

Number of Servings: 4

Ingredients

    1/2 cup chopped sweet onion
    2 small zucchini, quartered lengthwise and chopped into small chunks
    1 small summer squash, quartered lengthwise and chopped into small chunks
    2 T. olive oil
    1/2 to 1 t. dried basil
    salt & pepper to taste

Directions

Chop up the onion and saute it in a pan on med-hi with one tablespoon of olive oil for about five minutes, or until it becomes translucent. Add the zucchini and squash and drizzle the remaining one tablespoon of olive oil on top and turn the stove to low. Allow the vegetables to saute for approximately 10 minutes. You do not want them mushy! Upon completion, toss everything with the basil and then add the salt and pepper to your liking. Enjoy!

*This is also good with some chopped up mushrooms or red pepper added as well!
