Ingredients

    1 cucumber (8-1/4") Cucumber (with peel)
    .5 oz Feta Cheese
    1 medium whole (2-3/5" dia) Red Ripe Tomatoes
    1 wedge yields Lemon Juice
    1 tbsp Bragg Apple Cider Vinegar
    .5 1tsp Olive Oil
    .2 medium (2-1/2" dia) Onions, raw
    .5 tsp Dill weed, dried

Directions

Cut Cucumber down center. Scoop out the centers into bowl and mix with lemon juice, olive oil, vinegar, herbs (can use dill, parsley, mint, etc) and salt and pepper to taste. Cube the cucumber, tomatoes and onion. Mix vegetables, herb/vinegar mixture, and feta.
