Introduction

Ingredients

    2 chicken breast halves
    1 tsp chili powder
    1/4 tsp ground cumin
    1/4 tsp ground coriander
    1/4 tsp black pepper
    1/8 tsp ground cinnamon
    1 tsp salt
    1 1/2 Tbls vegetable oil
    3 Tblsp water

Directions

Preheat oven to 450 degrees.

Pat chicken dry. Stir together spices, salt, and 1 1/2 tsp of oil. Rub this mixture on the chicken. Heat remaining oil in a heavy pan, preferably an iron skillet, over medium high heat until almost smoking. Put coated chicken pieces in the skillet and brown on both sides - for about 5 minutes per side. Place entire skillet on the center rack of the oven and roast until chicken is done, 18-20 minutes. Remove the chicken to a serving plate, and deglaze the pan with water, scraping up the browned bits. Serve the sauce over the chicken.
