Introduction

Ingredients

    2 Tbsp OIKOS Greek Yogurt Plain Nonfat
    A drizzle of Extra Virgin Olive Oil
    1 large Fried Egg
    .5 Avocados, California (Haas) fruit without skin and seeds
    1 serving Dave’s killer bread thin-sliced good seed organic bread

    Season to taste (salt and pepper or I love Publix Avocado Toast seasoning blend.)

Directions

This is SO EASY.
Toast bread.
Fry egg.
Place avocado onto toast, top with egg. Dollop of Greek Yogurt and season to taste.

More detailed instructions: Pop bread into toaster. (please note that I'm eating thin-sliced so you will need to adjust if you're using another type of bread.)

While it's toasting, crack egg into a non-stick cooking pan or spray a little Pam onto a conventional pan. Fry to desired doneness.

While the egg is cooking and toast is ... toasting, cut an avocado in half. The half you aren't going to use for this meal can be drizzled with lemon juice and put into a baggie, then into the fridge. Toast should be done now, so the half that you are using, spread onto the toast. Top with the fried egg. A dollop of Plain, non-fat Greek yogurt goes on top. Drizzle some olive oil over it and then season to taste. I love the Publix Avocado toast seasoning but salt and pepper are fine, too! Lots of options would work. Taste a little bit and then decide how you wish to season it. I would love to hear your suggestions.
