Introduction

As "Karichelle" described it in her original recipe, "This recipe is easy, tasty, and cheap! Plus you get all of the vitamins and fiber from the cabbage and apples." (https://recipes.sparkpeople.com/recipe-de
tail.asp?recipe=966203)
This recipe eliminates the sugar, adds a few spices typical of roasted pork, and added carrots. It's a little cheaper in calories, as well!

Number of Servings: 4

Ingredients

1 medium head of cabbage, cored and chopped
3 apples, cored and diced (leave skin on)
1 sweet onion, chopped (about 5 oz)
    3 carrots, peeled and sliced
    2 tbsp. cider vinegar
    1/2 tsp salt
    1 tsp. nutmeg
    1 bay leaf, crumbles
    2 tsp. fennel seeds
    1 tsp. rosemary
1 lb. boneless pork loin center cut chops, trimmed of visible fat

Tips

Alternatively, this can be cooked at 375 degrees in the oven until the chops are done.

Directions

In a 4.5-qt slow cooker, combine all ingredients (except the pork chops) and stir. Mash down a bit if you feel like you don't have room for the chops (it will seem very full at first but the cabbage will cook down quite a bit).
Place unseasoned chops on top.
Cook on low for about 6 hours or until chops are no longer pink in the center.

Serving Size: 4 servings: 1 4-oz chop and 1/4 of cabbage mixture
