Ingredients

1 medium head of cabbage, cored and chopped
3 apples, cored and diced (leave skin on)
1 sweet onion, chopped (about 5 oz)
3 carrots, peeled and sliced
2 tbsp. cider vinegar
1/2 tsp salt
1 tsp. nutmeg
1 bay leaf, crumbles
2 tsp. fennel seeds
1 tsp. rosemary
1 lb. boneless pork loin center cut chops, trimmed of visible fat
Tips
Alternatively, this can be cooked at 375 degrees in the oven until the chops are done.
Directions
In a 4.5-qt slow cooker, combine all ingredients (except the pork chops) and stir. Mash down a bit if you feel like you don't have room for the chops (it will seem very full at first but the cabbage will cook down quite a bit).
Place unseasoned chops on top.
Cook on low for about 6 hours or until chops are no longer pink in the center.
