Introduction
Such an impressive salad. It's a BIG salad with lot's of flavor and not a lot of fat and calories. Don't be afraid of the bacon...the center cut bacon is less fat and calories per slice than turkey bacon. So no worries....enjoy!!! Such an impressive salad. Ingredients

6 oz bag of baby spinach (prewashed)
6 slices of Oscar Mayer Center Cut Bacon
2 large hard boiled eggs, sliced
1C mushrooms, sliced
2oz. radishes, sliced (approx. 2 large radishes)4T dried cranberries (craisins)
6T of T. Marzetti Spinach Salad Dressing
4T water
Directions
Place the bacon in a non stick skillet over med-high heat and cook until crispy. While the bacon is cooking take half of the bagged spinach and place on two large plates. Place 1/2C mushrooms, 2 oz. radishes & 1 sliced egg on top of each plate of spinach. When bacon is fully cooked and crispy lay the slices out on a paper towel and soak up any excess grease. Then crumble three slices of bacon over each salad. In a small bowl place 3T of the salad dressing, 2T water amd 2T cranberries. Warm the salad dressing mixture in the microwave for approximately 30 seconds. Then drizzle over the top of one of the salads. Repeat with the remaining dressing, water & cranberries and drizzle over the other salad.
NOTE: You could just as easily prepare the ingredients and toss in a large salad bowl before serving. I just like to be sure everything is distributed evenly, and even more important I get ever calorie that rightfully belongs to me. :-)
