Introduction

I wanted to make a healthy version of cake to eat with tea or coffee, those are my choices for beverage. I looked in the pantry and fridge, got out items and based on past experimenting I mixed it up. I did not put icing or frosting on this. Ingredients

    16.5 oz Cake, yellow, dry mix, light
    .34 cup Applesauce, unsweetened
    4 serving 1 Egg- large, fresh
    5 tbsp Chia Seed (Nutiva) 1 Tbsp
    0.5 cup Flour - Gold medal all purpose flour
    1 cup (8 fl oz) Water, tap
    1 serving Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry)
    .25 cup (not packed) Raisins

Tips

I will need at least 2x the raisins next time. I have only done this in our Microwave-Convection oven. Prep time is from mise en place (items at ready). The miniscule oil on foil crisped for being able to eat this by hand.


Directions

Mix cake mix, water, applesauce, eggs until blended but not smooth.
Stir in chia seeds with all *All-Purpose-Flour.
Lay foil sheet inside 9x13 pan, spritz or light smear of olive oil
Layer half of the mixture, spread oatmeal and raisins, top with rest of mixture.
1) Place pan on rack in Microwave/Convection oven, Bake Convex @ 375F for 23 minutes.
OR
2) Place pan on rack in preheated oven, Bake 350F 23-28 minutes.

Remove from oven, let cool 'til warm, remove foil w) cake to cooling rack.
