Ingredients

    2 tbsp Olive Oil
    3 large (7-1/4" to 8-1/2" long) Carrots, raw
    1 medium (2-1/4" to 3-1/4" dia.) Baked Potato, with skin
    1 tsp Massell stock powder (by JENMAYMARVIN)
    3 cup Goya Lentils, Cooked, Canned ((1/2 cup)
    1.5 cup Diced Tomatoes, Muir Glen Organic, No salt added
    3 cup, chopped Kale
    0.15 can (6 oz) Tomato Paste
    .25 tsp Coriander leaf, dried
    .5 tsp Cumin seed
    0.5 tsp Cayenne Pepper (Ground)
    1 tsp Oregano, ground
    .5 tbsp Lemon juice

Tips

Add salt and pepper to taste. Garnish with parsley if desired
